Lots of fresh greens bell peppers sweet onions grated carrots cold beans, canned it fine, rinse and drain. chopped tomatoes avocado cubes of cold, cooked potatoes you get it, anything you have in the fridge. You can add chopped veggie luncheon meats, I make " tofu croutons " , recipe below. Toss all with your favorite dressing and eat. Add some bread on the side if you like. Tofu croutons start with firm, water pack tofu, drain in a colander for a few minutes. cut into slices, about 3/4 inch thick or so, lay on clean kitchen towels, cover with more towels. Place a couple of goodo heavh books on top, or a cookie sheet with heavy cans on top. press the tofu for 15 or 30minutes. Then cut the pressed slices into 3/4 inch cubes. In a large heavy skillet add some olive oil, maybe 1/4 cup, no more than that, then the seasoning, whatever you like, curry powder is good, chili powder is yummy, I add maybe some garlic powder, onion powder, whatever I feel like, get the oil hot and well flavored witih pleanty of spices, then add the tofu cubes, toss well and saute until as done as yuo like, you can keep them in a while and they gete crispy, or leave them soft, whatever you like. Drain on paper, cool slightly and toss with salad. Toss all with your favorite dressing and eat. Add some bread on the side if you like.
