Tofu Loaf Recipe

Here is a basic one, no exact measurements, it is what I do:

2 pounds firm tofu, crumbled

1/2 - 3/4 pound mushrooms, wild, shitake, etc are nice, cleaned, sliced and sauteed'

a pound of so of fresh greens, steamed.

1/2 cup Greek or Italian olives, halved.

mix all together, add salt and pepper to taste. Pile into an oiled baking pan, press down firmly. Bake for an hour or so at about 350 degrees Fahrenheit.

 

Note, change the veggies to suit your taste, marinated artichoke hearts are yummy.
