Hi

 

does anyone have a good yummy carrot cake recipe - preferable with a creamy

frosting on it.

Carrot Cake

>

>2 cups sugar

>1 (12.3 oz) package silken tofu

>1 cup oil

>1 tsp. vanilla

>2 cups flour (all purpose)

>1 scant teaspoon salt

>1 TBS. baking soda

>1 TBS. cinnamon

>3 cups grated carrots

>1 to 2 cups chopped walnuts (I used 1/2 cup raisins

and 1 cup walnuts)

>Blend sugar and tofu well with electric mixer. Blend

at high speed for at

>least 3 minutes. This is very important. The

mixture should be creamy.

>Add oil and Vanilla. Mix dry ingredients together

and stir tofu mixture

in.

>Add carrots and nuts and pour in 9 x 13 inch pay

sprayed with vegetable

>spray (I just used a little oil and a coffee filter

to spread it). Bake in

>preheated over at 225 degrees for 2 to 2 1/2 hours

(check with toothpick).

>This cake is really rich and absolutely fabulous.
