I have a few simple recipies I can give to you (from " How It All Vegan " ), but they are from scratch. VERY easy, mind you. I am NO baker, but I did these two to prefection And you must also make your own icing/frosting, but that's not too hard. BTW in case you do not want to do the latter, you could always make the cake, then use vegan frosting on it, already made. A company called " Celebration " in my hometown of Sacramento, CA, makes it. It shouldn't be too hard to come across. Let me know how if I can get you one/a few recipies. And feel free to email me privately at herbalginger. Jen's Chocolate Cake (pg. 146) Ingredients 3 cups flour 2 tsp baking soda 1/2 tsp salt 3/4 cup cocoa powder 3/4 cup margarine (vegan) 1 1/2 cups dry sweetener 1/4 cup water 2 cups soy milk 2 tsp vanilla extract Directions: Preheat oven to 350 degrees F. In a large bowl, stir together the flour, baking soda, salt and cocoa powder. In a blender or food processor, blend together the margarine, sweetener, and water. Add this to flour mixture along with the milk and vanilla, and mix together gently until " just mixed. " Pour into a lightly oiled cake pan and bake for 30 minutes. Test with a fork to see if done. When cooled, ice and serve. Vanilla Cake (pg. 147) 1 1/2 cups flour 2 tsp baking powder 1/4 tsp salt 3/4 cup dry sweetener 3/4 cup soy milk 2 tsp vanilla extract 1/4 cup oil egg replacer (to = one egg)[use either Ener-G Egg Replacer, or flax seed oil: 3 tblsp=1 egg] Preheat over to 350 F. In a large bowl, stir together the flour, baking powder, and salt. Add the sweetener, milk, vanilla, oil and egg replacer and mix together gently until " just mixed. " Pour into a lightly oiled cake pan and bake for 25-30 minutes. Check with a knife to see if done. When cooled, ice and serve. I hope these are helpful.
