New family of vegans

We eat a lot of beans. Mexican and Indian cuisine lends itself easily to

this. Whole grain pasta and brown rice are also staples. As far as

toddlers, my daughter has always loved enriched chocolate Rice Dream. My

husband still drinks cow's milk, so we have it in the fridge, but whenever I

make Emma some cereal, I always use soy milk. And, in our house, I don't

just say " milk " but refer to all different kinds of milk (soy, rice, cow's,

almond, breast). I want my kids to think of plant-based (and human :-) )

varieties as normal instead of weird.

I have just joined this group and am looking forward to getting some

ideas on vegan cooking. My husband and I have been toying around

with the idea of going vegetarian and decided after reading Fit For

Life to try the vegan diet. It is going to be a tremendous change

for us, but we are actively seeking the best possible health for

ourselves and our children, and the idea of eating animal products

has always bothered me when I gave it thought. We have an 18 month

old daughter and I'm breastfeeding my 2 month old son. I would be

very interested in knowing what some of the " mainstays " of your diet

or favorite meal ideas are, especially toddler friendly meals. Also,

my daughter currently drinks a lot of milk. She loves cheese and

yogurt, too. I want to get her off of dairy products. What are some

good substitutions for her or ways to help her make the change?
