Could someone please explain to me what vegan margarine is. In our

household, we try to avoid hydrogenated oils, and I thought that all

margarines were hydrogenated. Any info. would be appreciated!

Thanks,

Jill

Hi there,

For buttermilk, you can add about 2 tsp. of vinegar or lemon juice per

cup of soymilk. Here is a " butter " frosting recipe. We use the chocolate

version for every birthday cake:

1/3 cup vegan margarine

4 1/2 cups sifted powdered sugar

1/4 cup soy milk

1 1/2 tsp. vanilla

1. In a mixing bowl, beat margarine til fluffy. Gradually add 2 cups of

the powdered sugar, beating well. Slowly beat in the 1/4 soy milk and

vanilla.

2. Slowly beat in the rest of the powdered sugar. Beat in additional soy

milk if necessary to reach spreading consistency. This frosts the top

and sides of two 8-9 inch layers.

For chocolate - prepare as above, but beat in 1/2 cup unsweetened cocoa

powder into the margarine and reduce the sugar to 4 cups.

Enjoy!

Caroline

Sorry to hear that some of the members on this list have experienced eating disorders. I have worked with women severely ill due to these illnesses and it was so painful to watch. I just want to say i'm glad that you are well now and thanks for sharing something that is very difficult to talk about.

---Mel,

hubby is training till sometime after new year. then

all we know is Iraq somewhere--we don't have a clue

yet and in some ways I hope I don't find out : ). his

unit is trained for convoys, checkpoints, and

house-to-house raids. so we know what they will likely

be doing just not where yet. sigh............
