Guest guest Posted August 17, 1999 Report Share Posted August 17, 1999 * Exported from MasterCook * Zucchini Carrot Muffins Recipe By : Taste of Home Quick Cooking (July/August 1999) Serving Size : 1 Preparation Time :0:00 Categories : Breads Breakfast Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package(18oz carrot cake mix 1 egg 1/2 cup applesauce 1/4 cup vegetable oil 1 1/2 cups shredded zucchini 1/2 cup raisins 1/2 cup pecans -- chopped In a mixing bowl, combine the cake mix, egg, applesauce and oil; mix well. Stir in the zucchini, raisin and pecans. Fill greased or paper-lined muffin cups three fourths full. Bake at 350 degrees for 25-30 minutes our until muffins test done. Yields about 16 muffins. You know - the kind where you peel off the wrapper until the tube pops open. Anyway, sometimes we'll cut those up into 3 or 4 pieces, fry them, then put them in a bag with sugar and shake. We call it Chinese doughnuts. Not at all healthy, but pretty good, and my seven-year old likes to help cut them up and shake the bag.
