Zucchini Carrot Muffins

 

Recipe By : Taste of Home Quick Cooking (July/August 1999)

Amount Measure Ingredient -- Preparation Method

1 package(18oz carrot cake mix

1 egg

1/2 cup applesauce

1/4 cup vegetable oil

1 1/2 cups shredded zucchini

1/2 cup raisins

1/2 cup pecans -- chopped

 

In a mixing bowl, combine the cake mix, egg, applesauce and oil; mix well.

Stir in the zucchini, raisin and pecans. Fill greased or paper-lined muffin

cups three fourths full. Bake at 350 degrees for 25-30 minutes our until

muffins test done. Yields about 16 muffins. However I squeeze it in to 12

muffins.

Kim,

 

I have had good luck simply using soy flour (1 TBS per egg plus a little

liquid) instead of eggs and soy milk instead of milk. I also use sucanat

instead of white sugar.

I found some of the biscuits-in-a-can at Wal-Mart that are vegan. You

know - the kind where you peel off the wrapper until the tube pops open.

Anyway, sometimes we'll cut those up into 3 or 4 pieces, fry them, then put

them in a bag with sugar and shake. We call it Chinese doughnuts. Not at

all healthy, but pretty good, and my seven-year old likes to help cut them

up and shake the bag. :)
