Wake-'em up Pancakes

Hi everyone! I have been reading everyone's postings...and agree that

this is supposed to be a recipe exchange list as opposed to political &

other stuff. So, in light of that, I am sending a recipe! :) Also,

please don't ....don't let a few make a mess for the rest of

us. I have only been a vegan for about 8 mos. and need all the help I

can get in finding recipes. Please stay and share your knowledge!

 

WAKE-'EM UP PANCAKES

 

2 1/2 cups whole wheat pastry flour, unbleached white flour, or a combo

1 1/2 cups soy milk or rice milk

4 tsps. baking powder

2 tsps. baking soda

1 tsp. salt

1 1/2 cups fruit juice (apple, orange, etc.)

 

In a large bowl, mix together the dry ingredients. When they are well

combined, stir in the soy/rice milk and the fruit juice. Mix

briefly---lumps are okay.

 

Heat a nonstick griddle or skillet (or a lightly oiled heavy skillet)

over high heat until hot, then turn it down to medium high. Spoon the

batter onto the pan, making 4-inch (silver dollar) pancakes. When the

tops are bubbly, turn them over carefully and cook until the underside is

golden and the middle is cooked. Serve immediately with maple syrup or

other toppings.

Yield: about 24 (4-inch) pancakes
