I have been reading everyone's postings...and agree that this is supposed to be a recipe exchange list as opposed to political & other stuff. So, in light of that, I am sending a recipe! Also, please don't ....don't let a few make a mess for the rest of us. I have only been a vegan for about 8 mos. and need all the help I can get in finding recipes. Please stay and share your knowledge! WAKE-'EM UP PANCAKES 2 1/2 cups whole wheat pastry flour, unbleached white flour, or a combo 1 1/2 cups soy milk or rice milk 4 tsps. baking powder 2 tsps. baking soda 1 tsp. salt 1 1/2 cups fruit juice (apple, orange, etc.) In a large bowl, mix together the dry ingredients. When they are well combined, stir in the soy/rice milk and the fruit juice. Mix briefly---lumps are okay. Heat a nonstick griddle or skillet (or a lightly oiled heavy skillet) over high heat until hot, then turn it down to medium high. Spoon the batter onto the pan, making 4-inch (silver dollar) pancakes. When the tops are bubbly, turn them over carefully and cook until the underside is golden and the middle is cooked.
