Guest guest Posted November 1, 2000 Report Share Posted November 1, 2000 Festive Potato Fans 6 large baking potatoes olive oil (optional) chopped scallions nondairy sour cream paprika Wash potatoes and lightly rub olive oil on skins. Cut across each potato to make sliced about 1/4 inch thick, being careful not to cut all of the way through the potato. Bake at 350 degrees until done. As potatoes bake, the slices will open in a fanlike fashion. Garnish with a dollop of nondairy sour cream, paprika, and chopped scallions. Also delightful with your favorite gravy recipe.
