Guest guest Posted November 5, 2000 Report Share Posted November 5, 2000 Cranberry-Coconut Cookies 1/2 cup oat flour 1/2 cup dried cranberries 1/2 cup walnuts, chopped 1/4 cup water 1/4 cup honey 1 cups sweetened coconut 1 tsp. vanilla 1/2 tsp. nutmeg 1/4 tsp. salt 1/2 tsp. ginger Mix all ingredients well, then spoon in mounds onto cookie sheet. Flatten cookies to about 1/3-inch thick. Bake at 300 degrees F. for 10 - 13 minutes. Cool completely before serving.
