Guest guest Posted November 5, 2000 Report Share Posted November 5, 2000 Holiday Cranberry Ring 1 can whole berry cranberry sauce 1 batch sweet bread dough 1 can frozen red grape juice concentrate dash salt 2 Tbsp. quick-cooking tapioca honey (or maple syrup) for top of ring Make filling by draining can of cranberry sauce through a colander for one hour, saving liquid for glaze and 1/2 cup of berries for decoration. Roll out dough to 20- by 15-inch rectangle and spread with filling. Roll up dough like a jelly roll, then connect ends together to form into a ring. Let rise until doubled, about 30 minutes. Bake at 350 degrees F. for 20 - 25 minutes. To make glaze, combine grape juice concentrate, saved cranberry liquid, salt, and tapioca in saucepan. Let stand 5 minutes. Bring to boil over medium heat. Simmer slowly, stirring often, until tapioca is clear and juice is thickened. Allow to cool, then stir. When cranberry ring has finished baking, brush with honey (or maple syrup), allow to cool, then decorate top with saved cranberries. Pour cranberry glaze over top and sides.
