Cranberry-Orange Bread

 

2 cups whole-wheat pastry flour or unbleached flour

1/2 tsp. salt

1 tsp. baking powder (or substitute 1 Tbsp. EnerG aluminum-free baking powder)

1/2 cup chopped walnuts

1 cup dried cranberries

2 Tbsp. vegetable oil

1 cup honey

1/2 cup orange juice, unsweetened

1/2 Tbsp. orange peel, grated

1 portion egg replacer (equivalent to one egg)

 

Preheat oven to 375 degrees F. Spray loaf pan with nonstick vegetable spray. In large bowl mix flour, salt, and baking powder. In small bowl, place walnuts, cranberries, and 1/2 cup of dry mixture; stir. Mix oil, honey, orange juice, orange peel, and beaten egg substitute in measuring cup. Add to dry mixture and stir lightly. Fold in nut-and-berry mixture. Pour into loaf pan and bake 1 hour at 350 degrees.

 

Yield: 1 loaf/12 slices
