Guest guest Posted November 9, 2000 Report Share Posted November 9, 2000 I have made this several times and love it....the sauteed onions are a must, they really finish this stew.... Source: 150 Vegan Favorites, author Jay Solomon 1 c green lentils, rinsed 4 1/2 c. water 1/2 c coarse bulgur 1/2 tsp salt 1/2 tsp pepper 2 cups chopped fresh spinach 1 to 2 tbls olive oil 1 med yellow onion, slivered...we have Walla Walla Sweet Onions here in the NW.... In a medium saucepan, combine the lentils and water and bring to a simmer over med. heat. Cook for about 25 min. stirring occ. Stir in the bulgur, salt and pepper and cook over med-low heat. Stirring occ. (I usually need to add more water). When tender 15 - 30 min. stir in the spinach, cover, remove from heat and set aside. In a large skillet, heat the oil. Add the onion and cook until lightly brown 7-9 min. Stir the onions into the stew or serve on top... Enjoy.... Can be made ahead and reheated...
