I haven't tried banana cream pie yet, although I've been planning to.

Chocolate cream pie, however, is one of the *easiest* vegan desserts I

make, and always the most popular among non-veg*ns (they'll never guess

it's tofu if you don't tell 'em!). It's super-creamy and extremely

rich and chocolatey. Here's what you do:

Take 2 boxes of firm or extra-firm *silken* tofu (the type in an aseptic

box on the shelf). Put them in a blender or food processor (I put

them in a bowl and blend with my hand blender), and blend until completely

smooth - about 2-3 minutes.

In a double boiler or in the microwave (stirring often), melt about

2 cups of chocolate chips.

Blend the melted chocolate into the tofu. Pour the tofu mixture

into a prepared pie crust and chill for several hours or until set.

You can vary this very easily - here are some ideas:

-add a tablespoon or two of hazelnut extract, peppermint extract, rum

or banana, or any other extract you think goes well with chocolate into

the tofu mixture.

-for a delicious chocolate peanut butter pie, heat half a cup of peanut

butter until softened and spread over the bottom of the pie shell before

pouring in the tofu mixture. Alternatively, you can just blend the

peanut butter directly into the tofu mixture.

I've made a wonderful chocolate-banana cream pie by laying sliced banana

in the bottom of the pie shell, and then adding a chocolate-banana mixture

(using banana extract as outlined above). Garnish with toasted shredded

coconut, if desired.

One thing I've been planning on trying is using chopped hazelnuts in

the tofu mixture itself; I imagine this would work quite well. And

it's possible that adding chopped banana to the tofu (I'd be sure to use

extra-firm tofu) and blending this instead of using chocolate would work

as well, although I'm not sure it wouldn't taste a bit tofu-ish.

A bit extra banana essence might counter that, though. Let us know

if you try it!
