Makes 2 Servings 3 ounces soft tofu 1 TBSP Peanut Butter 1/2 ripe banana mashed 1 TSP lemon juice 2 TSP maple syrup 1 TSP vanilla extract ground cinnamon Drain and then mash tofu well. Add remaining ingredients and mix well. Chill. To serve, spread on toast or eat as pudding. Sprinkle with cinnamon before serving.
