4 medium-large boiling potatoes, scrubbed & grated or minced (5 cups)

1 large onion, minced

2 T cornstarch

1 T reduced-salt soy sauce or Bragg Liquid Aminos

1/8 tsp. ground black pepper

2 tsp. safflower or canola oil

 

In a large bowl, mix together the potatoes and onion. Stir in the

cornstarch, soy sauce, pepper, and oil. Heat a nonstick griddle or large

nonstick frying pan. Drop the potato mixture by tablespoonfuls onto the

griddle or pan, and shape the mixture with a fork into round pancakes.

Fry the pancakes, turning once, until they are brown on both sides.

Serve them hot.

Yields 24 pancakes
