Bleu Cheese Salad Dressing

I thought that awhile back someone was looking for a bleu cheese dressing

recipe. I scanned the archives, but didn't find the request. However, I

didn't do a very good search. So, if someone requested this...great...if

not, maybe someone will need it some time.

Bleu " Cheese " Salad Dressing

Yields about 1 1/2 cups

 

1/2 cup crumbled firm or medium firm tofu

1/3 cup water

3 T lemon juice

2 T sesame meal

1 T vinegar (cider, white wine or rice)

1 tsp. salt OR 1 T white miso + 1/2 tsp. salt

1 large clove garlic, crushed

1/4 tsp. white pepper

1/4 tsp. soy sauce

 

Combine all the ingredients in a blender until very smooth. If the

dressing is too thick, add a little more water. Keep refrigerated in a

covered jar.
