Nicole __________________ Get your own FREE, personal Netscape WebMail account today at http://home.netscape.com/webmail I got this off the William-Sonoma recipe site: Banana-Oatmeal Power Cookies Ingredients: 1 cup all-purpose flour (I usually combine unbleached white and whole wheat pastry flour) 1/2 cup flaked coconut 1/2 cup rolled oats 1 tsp baking soda 1/2 tsp salt 1/4 tsp ground cinnamon 3/4 cup packed light brown sugar (I usually sub maple syrup here, about 1/2 cup 6 tbsp. soy margarine (3/4 stick) at room temperature 1 very ripe banana, mashed 1/2 cup chopped dried apricots or golden raisins 1/2 cup chopped walnuts This recipe also calls for an egg, which I sometimes replace with Egg Replacer (but this is expensive, so I don't buy it often), or a little oil, but most of the time, I just omit completely. Directions: Preheat oven to 325 F. In a bowl, stir together the flour, coconut, oats, baking soda, salt and cinnamon (I'm a big sifter, so I usually process the oats first and then sift it all together).In a large bowl, cream the brown sugar and butter with a wooden spoon until fluffy. Add the banana and egg substitute, if using, and beat with a fork until blended. Stir in the flour mixture, about a 1/2 cup at a time, then stir in the apricots and walnuts. Spoon the dough by heaping tablespoonfuls onto lightly greased baking sheets, spacing cookies about 2 inches apart. Bake about 12-15 minutes, until golden brown.
