Fajitas (also makes a great stir fry)

 

2 cups onion broth mix, prepared with boiling water

1 tablespoon liquid smoke

1 large onion, coarsely chopped

2 limes

2 cups dry soy (beef style) strips

2 peppers -- green or red, coarsely chopped

2 teaspoons garlic powder

tortillas

salsa

 

Mix soy strips, broth, and liquid smoke. Cook on high in microwave

for 5 minutes.

 

Put a wok or skillet on high heat to warm up.

 

Drop peppers in skillet. Add soy mixture and onion. Sprinkle garlic

powder and the juice of the limes over the mixture while cooking.

Stir constantly for 5 minutes.

 

Serve with tortillas and salsa (or for a stir fry add your favorite

veggies -- broccoli, cauliflower, zucchini, carrots, snow peas, cubed

beets, & bean sprouts make a great combination -- and serve over

basmati rice). (6 - 8 portions)

 

 

 

This next one is vegetarian, but not strictly vegan (so I hope I

don't get blasted for posting it, but it really is the one I like

best). I get many requests to bring this dish to potluck dinners.

 

King Kraut Kasserole

 

2 cups dry soy (ground beef style)

30 oz. Sauerkraut

1 can cream of celery soup

1 can cream of mushroom soup

1 cup skim milk OR 2 tablespoons soy cremer with 8 oz. water

2 cups onion broth mix, prepared with boiling water

1/4 cup finely chopped onion

1/2 cup imitation bacon bits

4 cups cooked noodles (amino-acid-balanced vegetable curles are the

best)

pepper to taste

shredded cheddar cheese

 

Mix soy with broth, onions, and pepper. Microwave for 3 minutes.

Add bacon bits.

 

Preheat oven to 375F.

 

In a 13 " x 9 " casserole dish, layer 1/2 of the soy mixture, 1/2

noodles, and 1/2 sauerkraut. Repeat with remaining halves.

 

Mix soups and milk. Pour over mixture. Cover loosely with foil.

Bake for 30 minutes. Top with cheese and serve. (8 - 10 portions)
