Guest guest Posted January 5, 2001 Report Share Posted January 5, 2001 I love nutritional yeast! I like to use it in " cream " soups with tofu to add a cheezy zest. And, I love to sprinkle the flakes on hot breadsticks. I usually add it to just about anything savory for extra flavor and richness as well as B vitamins. At the library, I once found a recipe book put out by Red Star about cooking with nutritional yeast. It had some really great recipes and a complete nutritional report on the yeast. It also explained how the yeast was manufactured. Very interesting. You might want to see about getting it. Jill PS Could anyone tell me what maltodextrin is? So, when I made the change, I went through some big time withdrawals. Then I stumbled upon some recipes (the 3 that I posted yesterday) and I was so happy. Now, in truth, nothing is going to taste EXACTLY like " real " cheese....but these sauces, especially the melty pizza 'cheese' are a yummy alternative. It brings back a creaminess to pizza and makes a great grilled 'cheese' sandwich...which used to be a passion of mine. Nutritional yeast is just chock full of good stuff! I highly recommend you trying one of those recipes for yourself....also, don't be afraid to add or subtract with them. I have a friend that makes the jalapeno cheezy sauce without the jalapenos or red peppers, but dumps in salsa & chili powder for a different taste.
