Guest guest Posted February 7, 2001 Report Share Posted February 7, 2001 Carrot Cake 1/2 cup warm water 2 Tbs. yeast 2 tsp. honey 1/2 cup soy or rice milk 1 1/2 cups carrots, finely grated 1/2 cup walnuts, chopped 1 1/2 tsp. orange rind 1 1/2 tsp. coriander 1/4 cup unsweetened coconut 2 2 1/2 cups whole wheat pastry flour 1/2 cup olive oil 3/4 cup honey 1/2 tsp. sea salt 1 tsp. vanilla 1 tsp. maple extract pinch of anise (optional) In a bowl, combine warm water, yeast and honey. Let stand until it bubbles, then add all remaining ingredients except whole wheat flour. Mix well, then stir in flour. Pour into oiled pan. Sprinkle coconut on top and let stand 10 - 15 minutes in a warm place. Preheat oven to 350 degrees and bake for 45 - 60 minutes. This is a rich treat. Can be made into cupcakes baked in a muffin tin.
