Guest guest Posted February 10, 2001 Report Share Posted February 10, 2001 Chili Con veggies 1 cup kidney beans or black beans 4 tablespoons oil 1 1/2 teaspoons chili powder 1/2 teaspoon cumin 1/2 teaspoon tumeric 1 large green bell pepper, cored, seeded & chopped 3 sticks celery, chopped 1 large carrot, chopped 2 large tomatoes, choped 4 tablespoons tomatoe paste 2 to 3 tablespoons lemon juice (optional) salt to taste Drain the beans, place them in a pan and cover with fresh water. Bring to a boil and boil vigorously for 10 minutes. Half cover and simmer gently for 1 to 1 1/2 hours longer, until the beans are tender; drain and set aside. Heat the oil in a heavy skillet and saute the spices for a few minutes. Add the green bell pepper, celery and carrot and cook for 4 to 5 minutes, til the veggies are slightly soft. Stir in the tomatoes and tomato paste and simmer for 15 minutes. Add the cooked beans and simmer for 15 minutes longer.
