These are from "Tofu Cookery" by Louise Hagler. Like I said before, I thought some of them needed to be played with a little, make them to the taste and consistency that you like. You'll probably need to make adjustments depending on the kind of tofu you use, and if you use granulated or liquid sweetener. I personally try to keep the oil out to make them less fattening, silken tofu might make a creamier pudding if you leave out the oil, or you could try replacing with soymilk. A few recipes use dates to replace sugar, which is a good way to cut back on sugar. You could probably try substituting like that in some of the other recipes too. A few of her recipes called for honey; I suggested some substitutes, but I just typed them in the way she put them in the cookbook. I guess the key here is try and try again! Jennifer VANILLA: 1 1/2 lbs. of soft tofu 1/4 cup oil 1 cup sugar or 7/8 cup liquid sweetener (she said honey) 1 tbsp. vanillla CHOCOLATE: 1 1/2 lbs. of soft tofu 1 1/4 cups of sugar, etc. 1/3 cup cocoa 1/4 cup oil 1 1/2 tsp. vanilla 1/4 tsp. salt or soy sauce BANANA: 1 lb. soft tofu 1/4 cup oil 2 tsp. vanilla 2 ripe bananas 1/2 cup sugar BANANA-DATE: 1 lb. soft tofu 1/4 cup oil 2 tsp. vanilla 2 tbsp. soymilk 1 tsp. lemon juice 1/4 tsp. salt 1/2 cup pitted dates, chopped 2 ripe bananas BANANA-HONEY: or whatever liquid sweetener you like, agave nectar or warm (to thin it for easier mixing) brown rice syrup would probably work well. 1 1/2 lbs. soft tofu 1/2 cup honey, etc. 1/4 cup oil 1 tbsp. vanilla 1/4 tsp. salt 3 medium bananas LEMON: 1 lb. soft tofu 1/4 cup oil 2/3 cup sugar 1/8 tsp. salt 6 tbsp. lemon juice 1/2 tsp. vanilla (I thought this needed MORE lemon!) STRAWBERRY: 1 1/2 lbs. tofu 1 1/2 cups fresh, ripe strawberries 1/2 cup sugar, etc. 1/4 cup oil 1 tbsp. lemon juice 1 tsp. vanilla pinch of salt ORANGE: 1 1/2 lbs. soft tofu 1/4 cup oil 3/4 cup sugar 1 tsp. vanilla 1/8 tsp. salt 3/4 cup frozen orange juice concentrate ORANGE-DATE: 1 1/2 lbs. soft tofu 3/4 cup pitted dates 1/2 cup frozen orange juice concentrate 1/4 cup oil 1 tsp. vanilla pinch of salt CAROB-HONEY: (or whatever sweetener) 1 1/2 lbs. of soft tofu 2/3 cup carob powder 1/2 cup honey, etc. 1/4 cup oil 1 tbsp. vanilla 2 tsp. lemon juice pinch of salt ALL RECIPES: Blend in food processer or blender until smooth and creamy. Pour into serving dishes or baked pie shell and chill until set (usually a few hours I find; overnight is best for pie). HOPE YOU ENJOY!
