When I make soups such as sweet-potato or carrot or lentil or any other thick soup I find that it either turns out just like mashed veges or if I try to make it smooth and runnier it separates into mashed vege with liquid around it. I don't use a blender, I use a potato masher or sometimes a Bamix. I'm wondering how I can make a lovely soup like I'd buy in a restaurant. Here is an example of how I'd make a soup. Can anyone see where I'm going wrong? Put chopped up sweet-potato and carrot in a pot with water. Boil until it's all soft. In the meantime fry chopped onion and celery. Add some spices and ginger. Add the fried stuff to the veges and simmer for a little while. Mash the whole lot with a potato masher (without draining the water out first!) Serve and sprinkle with chopped spring onions.
