Guest guest Posted March 13, 2001 Report Share Posted March 13, 2001 Favorite Artichoke Dip Source: The 20/30 Fat & Fiber Diet Plan 1/2 lb. fresh spinach, large stems removed OR 10 oz. frozen spinach, thawed 2 garlic cloves, minced 15 oz. canned white beans, drained 1 bunch green onions, sliced 1 pinch cayenne pepper OR 1/2 tsp. hot pepper sauce (or to taste) 2 Tbsp. fresh lemon juice 16 oz. canned artichoke hearts, drained and finely chopped red bell pepper rings for garnish Serve with toasted pita wedges or sliced raw sweet potatoes. Wash the spinach and place it in a pot and cook over high heat until just wilted, about 2 minutes. Drain. Place the spinach and remaining ingredients, except the artichokes and garnish, in a blender or food processor and puree until smooth. Transfer the puree into a serving bowl and stir in the chopped artichoke hearts. Yield: about 3 cups, per 1/4 cup: calories: 48, fat: 0g, fiber: 5g.
