Guest guest Posted March 16, 2001 Report Share Posted March 16, 2001 Salad and Raspberry Lemon Dressing Source: Creation, Illustrated Vol. 3, No. 3 1 head green lettuce 1/2 red onion, sliced 1 can mandarin oranges 1/3 cup pecans, lightly toasted Dressing: 6 - 8 oz. frozen raspberries 1 Tbsp. lemon juice 1 tsp. olive oil (optional) Prepare dressing by thawing the frozen raspberries. Strain raspberry juice through a tightly meshed sieve. Try not to let many seeds through. If berries are unsweetened, add one tablespoon of white grape juice concentrate.
