Guest guest Posted May 1, 2001 Report Share Posted May 1, 2001 Hi all, I am a single vegan mom to my beautiful and exhausting 21 month old daughter. We live in Albuquerque, New Mexico. My daughter loves tofu nutritional yeast sauces, hummus, pasta mixed with refried beans, tortillas, any fruit, avacado, broccoli (she will eat it if I call it trees) and smoothies. My latest discovery is Earth Balance margerine, it is 100% vegan (even says so on the label which is nice to see), non-GMO, and non-hydrogenated. I saw that there was one Australian on the list. I just bought Vegemite and find the taste to be a bit strong to be spread on toast, do you know of any recipes I can use it in? Is Marmite better? To any new vegans--I suggest purchasing some nutritional yeast, it is a great source of B vitamins (B-12 included) I buy KAL brand and Red Star is vegan too, just look for any that says vegetarian support formula, some contain whey, a dairy by-product. Some other vegan staples, texturized vegetable protein (great for chili, spagetti sauce, taco filling, even " bacon " bits), tahini, canned beans for quick meals--daughter loves refried pinto, also garbanzo for hummus, baked beans, soy milk--IMO Silk is the best tasting, but also one of the more expensive, pasta, brown rice, those aseptically packaged boxes of silked tofu are great to have around for quick dips and smoothies. Of course, fresh fruits and vegetables are essential, like yams, baby carrots, bagged baby spinach for healthy salads. My daughter loves finely chopped walnuts, great for essential fatty acids and calorie dense like the little ones need (but no good for Mama ) Hmmmm, what else...dry cereals, grains like quinoa, millet, nut butters--almond is great but $$$, frozen fruit juice concentrate for sweetening things like oatmeal, breads, and cookies. My favorite vegan cookbook is _Vegan Vittles_ by Joanne Stepaniak, I've heard her others are great too. When I get time, I'll post some recipes. I hope this helps someone. Good luck!
