I did advertising work for a magazine called Sugar Journal quite a few years ago and spoke with the staff there about sugar several times and the process of refining. Fructose is not refined using any bone filters like most white sugars. Although it is refined as are all sugars sold in the US. Every type of sugar whether it says unrefined or raw or whatever, are refined in some way due to FDA regulations. But not all sugars are processed using bone. To the best of my knowledge, none of the " so called natural " sugars are refined using bone. I tend to use Florida Crystals Organic. It breaks down easy unlike sugar in the raw plus it's organic. Fructose is fine for certain recipes but Fructose has a certain bite that makes it, in my opinion, usable for all situations. Good stuff but not for everything.
