What is everyone making for dinner tonight?

Well, not EVERYONE LOL...imagine if EVERYONE responded LOL! ;-) I

was thinking of making some type of burrito thing. I am straped for

ideas right now! I have a ton of canned veggies and beans,

pasta...but all I think is burritos! Borring!

I bought some of the new Garden Burger Grilled Chicken thingies. I decided

to have them tonight, so I coated them with Nayonaisse, sprinkled them with

bread crumbs, baked them and had 'em with stuffing and corn. Yummy! I

know that probably doesn't help you, but I thought I'd share just the

same. Those of you who haven't tried the grilled chicken things really

should. It's delish

Well I made tofu spaghetti, creamy vagan asparagus shells (you know those

oval pastry shells that you put filling in and bake kinda bite sized

things), and I am about to make a vegetable stew with brown rice :P~~~~

 

Recipe for Tofu Spaghetti,

 

Spaghetti Pasta

 

1 Jar of Tomato pasta sauce

1 block of firm tofu cut into small pieces

1 heaped tablespoon of peanut butter unsalted

1 clove of crushed garlic

1 medium onion

Corn kernals

Olive oil (cold pressed extra virgin)

 

Fry onion and garlic in a dash of olive oil, add tofu, and spaghetti sauce,

and peanut butter and corn kernals and stir.

 

Cook amount of pasta required for your family, drain then add the tofu mix

with the pasta and serve yummo!!!!!!

 

Variations: add sliced olives when corn is added

add some sliced mushrooms and capsicum with the onion when

frying

What is everyone making for dinner tonight?

 

Here's what we had at our house (I have two growing teen-age boys. . .so cooked lots!):

 

~ brown rice spaghetti casserole with a nutty pimento/cashew cheese sauce

~ asparagus and carrot patties and cashew gravy

~ potato salad

~ six bean salad (should have been 3 bean, but I got carried away)

~ potato soup for those who wanted more! (leftovers from yesterday)

 

:) It was all vegan. . .and I'm having to cook gluten-free now for my dh. . .so it was gluten-free too.

Ok, now I feel like a real loser! We had Soy Boy ravioli with spaghetti sauce and garlic herb bread (translated: toast with soy margarine, garlic and herbs!)

If you're talking about the GardenBurger things I cooked, they look like

little pieces of grilled chicken they even have the little grill marks on

them. They're pretty new, I believe. Just started seeing them at the

supermarket about a month ago. As I said before I didn't read the

ingredients (I'll never make that mistake again) so I'm not sure what all

is in them, but I do know they're great tasting.
