Guest guest Posted May 9, 2001 Report Share Posted May 9, 2001 Asparagus Patties *Here is a recipe I tried this past week-end. It is a " keeper " . . .very delicious! It is vegan and gluten-free and tastes good too! 1 1/2 cups asparagus (raw, chopped fine) 2 cups carrots (shredded) 1/2 cup onions 1/2 cup cashews (ground fine) 1/2 tsp. paprika 1/2 tsp. thyme 1/2 tsp. salt 1/4 cup arrowroot powder (or cornstarch) 1/4 cup potato flour 1/4 cup rice flour 1/4 cup water Chop and shred the vegetables (a food processor works well for this). Mix the vegetables, dry ingredients, and nuts together in a bowl. Add the water and mix well. Form into small patties and place on an oiled baking sheet. Bake at 350 degrees for 15 minutes on each side. makes 12 - 14 small patties. Variations: Use almonds or sunflower seeds instead of cashews. You can also fry the patties in a small amount of oil rather than baking them (which is what I did. . .and I prefer this method). Add additional seasonings: Bragg's Aminos; a chicken-style seasoning such as Bill's Best, or additional herbs. Serve with a creamy gravy or serve plain with tartar sauce.
