Guest guest Posted May 9, 2001 Report Share Posted May 9, 2001 Cranberry Ice This is colorful, refreshing, and easy, though the work that went into something like this in Colonial days was considerable. Ice had to be stored from the wintertime and then used in hand-cranked ice cream makers. One had to stir for a long time to get a nice smooth texture. 3 c. fresh cranberries 3 c. water 1 1/2 c. sugar (Florida Crystals brand is vegan) 1 tsp. fresh lemon juice Simmer the cranberries and water in a covered stainless steel pot until they are very tender, about 10 min. Strain the berries, reserving the juice, and puree in a food processor with some of the juice. Add the remaining juice, sugar, and lemon juice. Refrigerate until chilled and freeze in an ice cream maker. Or you can freeze mixture in a small pan in the freezer, stirring every 15 min. or so until a nice texture is achieved.
