Coconut Carob Frozen Pudding Dessert

1 cup water

12 dates, pitted and dried

4 bananas

2 Tbsp. vanilla

1/2 cup coconut, unsweetened, shredded

1/2 cup carob, powdered

1 tsp. guar gum, powdered (may use up to 1 1/2 tsp. or substitute xanthan

gum)

 

Place all the ingredients in the container of a High Powered Blender

(Vita-Mix type) in the order listed above. Install the cover and insert

the " tamper/mixing stick " (make sure it's the one supplied by the

manufacturer, and that it cannot reach the blades). Start the blender

at slow speed and quickly increase to the highest speed, in stages.

 

Assist the mixing as necessary with the " tamper/mixing stick " . Remove

the " stick " and allow the mixer to suck air into the vortex. When the

mixture has become very thick, stop the mixer.

 

Pour into 4-oz. plastic cups with lids (Dixie type), or into

" ice-cream-on-a-stick " molds. Place in freezer. When solid, your treat

is ready to enjoy.
