I suppose that I shouldn't be as most nutritional information that is available to the average consumer is tainted by the USDA, the beef industry, the dairy industry and of course the other mongers of death, poultry and swine industries. Things become more confused by so-called nutritional experts who have been trained by the American Dietetic Association and of course they primarily adhere to the USDA party line. I will post some good vegetarian and vegan links that contain nutritional information. These should be off assistance to those with questions. I can highly recommend Laurel's Kitchen for any newbies out there. While it is lacto-ovo vegetarian rather than vegan there are several vegan recipes and the others can easily be adapted to be vegan. It does however contain a WEALTH of nutritional information for vegetarians and vegans. At times they may be a tad conservative, but next to the ADA and USDA the authors look like radicals. Laurel's Kitchen should be available at most libraries if you want to read it first before buying it. Please keep asking questions, because that is how one learns. Nutrition is fairly easy despite what our mamas might have told us and it DOESN'T require taking a lot of vitamins every day to stay healthy.
