I found organic zucchini at a modest price this week, and have had a great good time with them. I of course have eaten several raw. This is a great way to consume fresh zucchini. I have also made some recipes with them. Italian Zucchini sliced zucchini chopped onion sliced mushrooms chopped tomatoes GARLIC salt pepper Italian seasoning oil oil Stir fry veggies in olive oil with seasonings. Serve over pasta or millet. Bellisima!!!! Tofu Zucchini 2 pounds tofu 2 whole zucchini 1 whole onion ( sweet vidalia is the best) 2 T. capers Garlic 2 T. vegan mayo or olive oil 2 T. Flax seed Blend till smooth in food processor. Use as sandwich spread, dip or topping for potatoes. I love the fresh veggies. Tomorrow I am making fried green tomatoes with rice and cream gravy.
