Guest guest Posted June 6, 2001 Report Share Posted June 6, 2001 On replacing eggs: I've found that for many recipes the Ener-G egg replacer is great. But for other recipes it's just a major flop. Some things that I've used to replace eggs have been apple sauce, bananas, silken tofu and odd combinations of the above 4. It all depends on what you're trying to make, especially with the apple sauce and bananas because their taste is quite strong and can sort of screw up the recipe. You really just have to experiment and play the educated guessing game. One thing that I've yet to perfect, probably due to the lack of eggs, is brownies. They either come out cake like, low and hard or sort of " swampy " . I've never been able to get that full, firm texture. The cake like ones are the best to eat but still not really a brownie.
