A good way to ease into a vegetarian diet is to make some of your favorite dishes using a ground beef substitute like Gimme Lean, Boca Burger Recipe Basics or Morningstar Frozen Crumbles in place of the meat. They all have a ground beef-like texture and a bland taste that takes on the flavor of what they are cooked with. Some ideas: spaghetti sauce, sloppy joes, meatloaf, chili, tacos or burritos, lasagna or casseroles. In my experience, I've found that many meat dishes can be approximated using soy-based alternatives. Let me know if you need more ideas. She told us about a cook book that used olive oil in every recipe, even ones you wouldn't think of such as cookies and cakes. I'll tell you, they were great cookies!
