Carrot Cookies 1 cup whole wheat pastry flour 1 tsp. baking powder 1/4 tsp. salt 1 cup quick-cooking oats 1/2 cup chopped walnuts 1/2 cup raisins 1 cup grated carrots 1/2 cup pure maple syrup 1/2 cup oil 1/2 tsp. vanilla Preheat oven to 375 degrees. In a large bowl, combine flour, baking powder, salt and oats. Add nuts, raisins and carrots and stir. In a large measuring cup, whisk together the maple syrup, oil and vanilla until well-combined. Stir wet mixture into dry mixture. Drop batter by rounded teaspoon onto greased cookie sheet and gently flatten to 1/2 " thick or so. Bake until golden brown, 9 to 11 minutes. Cool 3 minutes on cookie sheet, then transfer to wire rack or counter to cool completely. My notes: -I usually have on hand REGULAR oats, not quick, so I just put them in the food processor for a few seconds (which makes " quick " oats, as they're broken down). -I also usually like to reduce the fat in everything I made, so I made these straight, and they're good, and then the second time, used a quarter cup of oil instead of half a cup, and then used also, a quarter cup of prune puree (I make my own, just process or blend prunes with boiling water until you get a smooth puress, just like " lighter bake " ). these turned out just as good if not better. if anyone hasn't done this before, it's such a great trick, and you really don't have to fear any prune taste, if you don't like them. -I used walnut oil, but I've also used LIGHT olive oil in baked goods and that works well too. -I also added cinnamon, which I think makes them even better. -One time I used honey instead of maple syrup- still good but not AS good.
