Red Beet SaladThe flavor for this simple salad comes from the delicate pine nuts, sweet red beets, and fresh dill. In Russian cooking, beets are prepared with dill, garlic, and sour cream (I'd use soy yogurt or soy sour cream or, if it has to be all-raw, cashew cream with lemon juice). I think I even looked in the garbage (sign of a budding composter). It wasn't until I was 8 and an aunt let slip that it was made out of beets that it all finally made sense.
