This is the cake I made for my dd's 2nd birthday. It is a double layer

cake. We all love it! Not sure what else your ds can eat besides bananas,

rice and carrots but hope this helps.

 

Chocolate Raspberry Mocha Layer Cake

 

Ingredients:

 

2 cups unrefined sugar

3/4 cup oil (substitute applesauce to lower fat content)

1/4 cup water

2 tsp vanilla

3 cups flour

1 cup cocoa

2 tsp baking soda

1/4 tsp salt

2 cups soymilk

1 shot of espresso or very strong coffee

1/4 to 1/2 cup fruit-sweetened raspberry jam

 

Directions:

 

Blend the sugar and oil. Add the water and stir well. Add vanilla extract.

In a separate bowl, mix flour, cocoa,

baking soda, and salt. In another bowl, measure out soymilk and espresso or

coffee.( I use decaf.) Add the flour mixture

gradually to the oil and sugar mixture, alternating with the soymilk. Pour

batter into two oiled 9 " pans and bake 40

minutes at 350 degrees.

 

When cake is baked, remove from pans and cool on a wire rack. When cool to

the touch, spread the top of the

bottom layer with raspberry jam. Top with second cake layer and frost with

your favorite vegan chocolate

frosting. Enjoy!

I've found two recipes for vegan-looking cakes in my stash of

recipes. (I've only been vegan for a month (but veg for 15 yrs), so

if they aren't vegan, kindly let me know.) maybe one will work for

you?

 

Easy Chocolate cake

 

3 c flour, sifted

2 c sugar

1/4 c cocoa

2tsp soda

2/3 tsp salt

2 Tbsp vinegar

2 tsp vanilla

2/3 cup vegetable oil

2 cups strong coffee

 

Mix everything together and pour into an ungreased 13x9 " pan. Bake

at 350*F for 35 minutes or until done.

 

[only needs a sprinkling of powdered sugar, as the texture is fairly

light, more like a cake mix than a scratch cake. best served from

the pan. i don't recall it tasting of coffee, but it's been a while,

and i am a coffee lover.]

 

 

Hot Fudge Sundae Cake

 

1 cup flour

3/4 cup sugar

2 Tbsp cocoa

2 tsp baking powder

1/4 tsp salt

1/2 cup milk (soy milk works great)

2 Tbsp oil

1 tsp vanilla

 

In a 9 " cake pan, combine dry ingredients, then blend in wet

ingredients. mix well with a fork until completely combined.

 

Sprinkle over the top:

1/2 - 3/4 cup brown sugar

1/2 cup cocoa

 

Pour 1 3/4 cup very hot water over everything, but DO NOT STIR. Trust

me on this!

 

bake for 40 minutes at 350*F. the cake will float to the top, and a

really rich pudding-like sauce will form on the bottom. Serve warm

with vanilla ice cream (soy, of course) or alone. absolutely divine.
