help with casserole ideas? plus spinach-dill dip

Does anyone have a good hearty casserole type recipe? The weather has

turned decidedly chilly here on the coast (San Francisco area) and I'm

coming up empty on dinner ideas that are filling, warming and yet not too

fat loaded. Thanks for any help!

 

Also, I just typed out this recipe for a friend, so I thought I'd post it

as well:

 

The recipe for the dip is from John Robbins book, " Diet for a New World " .

It is

Spinach-Dill Dip:

 

1 ripe medium avocado, peeled, stone removed and quartered

1 ripe medium tomato, quartered

1/2 medium red onion, quartered

2 garlic cloves, crushed

3 tablespoons chopped fresh dill

3 tablespoons freshly squeezed lemon juice

2 tablespoons Bragg Liquid Aminos

1/4 teaspoon grated nutmeg

1/4 teaspoon freshly ground black pepper

1 1/4 pounds spinach, well washed, stems removed

 

In a food processor fitted with a metal blade, pulse all the ingredients

except the spinach until pureed. Add the spinach in batches, and process

until each batch is pureed before adding the next.

 

Transfer the dip to a serving dish, cover and refrigerate for at least 1

hour before serving. The dip keeps, covered and refrigerated, for 1 day.

 

We served this inside a hollowed out sourdough round loaf with chunks of

bread for dipping, as well as fresh veggies- snow peas, sweet red pepper,

carrots, celery, califlour, broccoli, all the usual suspects on hand.
