help with casserole ideas?

This sounds sooooo good!

Can I buy smoked tofu or is it something I have to do

myself? I've never seen 'smoked' tofu? What's the

brand and where can I get it. I wanna make this.

My family really likes this recipe. It is definitely a stick-to-your-ribs type casserole. I got it from a cook book called "The Ultimate Vegetarian Cook Book" and veganized it.

 

Cowboy Hot Pot

Serves 4-6

 

1 onion, sliced

1 red pepper, sliced

1 sweet potato or 2 carrots, chopped

Does anyone have a good hearty casserole type recipe? The weather hasturned decidedly chilly here on the coast (San Francisco area) and I'mcoming up empty on dinner ideas that are filling, warming and yet not toofat loaded. Thanks for any help!

A company called Tree of Life makes the smoked tofu I use. I buy it at a natural foods store. I've smoked my own, but it never tastes quite the same.
