Used to do one with cheese but as I don't use that anymore...and the recent description of cheese substitutes doesn't really make them sound too appealing <g> Thanks for the help, Sarah W. Guest guest Posted August 3, 2001 Report Share Posted August 3, 2001 Hi, here is a sort of meat-loaf that is vegan and still in the optimization phase. 1 tube gimme lean ground soy beef 1 tube saltines or low-salt crackers veggies as desired: I like celery, onions small amount of water or soy milk basil, sage, parsley, garlic to taste Mash the meat with a tube of cracker crumbs. Add veggies and spices. Add the liquid until a little damp. Cook in oven, 350 F, for 40 minutes or until crisp on outside and cooked in middle. I find this makes a very reasonable 'meatloaf', however feel free to experiment or give comments because it is a new recipe. Also i like to put Franco-American mushroom gravy (vegan!) on top, but that's optional of course. Good luck!
