I have only just come into a vegan lifestyle and am still learning... not everyone on this list is a vegan.. some people are trying to make a transition into a vegan lifestyle but have no idea where to start.... you should be helping those of us who are learning.. not condemning us... at least we are here to learn alternatives in our cooking. Potato Rolls 2 to 3 cups of mashed potato mixed vegies (such as corn, brocolli, spinach, and carrot) vegetable stock cube 2 table spoons of natural soy yoghurt corn flour pastry of your choice to use like you would for " sausage rolls " mix potato, vegies, stock cube, yoghurt, and add cornflour to make it a more " thick " base if it is too runny (but dont make it too dry), spread sparingly on pastry and roll and cut into mini rolls... put in the oven on average temp until brown.. An alternative to this is make a pie shell and layer it with potato mixture then a fine layer of baked beans.. then add more potato.. put a pastry lid on and bake some more.. my husband loved it!! Guest guest Posted August 7, 2001 Report Share Posted August 7, 2001 Well being a vegan for over two years and big animal rights activists I can just say that its hard when people don’t get the whole meaning of what it means, sure not all people are vegans for the animals, but being a vegan will effect animals. I think some people, me included, just get disgusted in how mundane people are about killing animals, now that doesn’t mean we should attack them but I kind of get where Viv is coming from. I personally didn’t get why that person (sorry I can’t recall your name) posted about tuna on a list that is for vegan recipes but hey that’s ok, she made a mistake. I guess we cant all be at the level of compassion that I try to be at but that is what makes the world go around, many different people and many different lifestyles. OH I just wanted to add another favorite recipe that me and my kids and also hubby love to make once in a while. PEROGIES 2 1/2 pounds red potatoes,( I use baking potatoes also) 2 tablespoons vegan butter( I use earth balance) 2 onions, chopped 1/2 pound soy bacon, I used dry bacon bits ¼ cup nutritional yeast 2 tsps garlic powder 2 cups flour 1/2 teaspoon salt 1 cup warm water 1/4 oil Boil the potatoes until well done, drain and mash with butter. Set aside. In a large skillet over medium heat cook the onions and bacon together(I wait until the onions are almost done and just add the dry bacon in).. Add the bacon and onions to the potatoes. Stir the nutritional yeast into the potato mixture. Mix well. Chill until very cold. Mix flour and garlic powder and salt in large bowl. Make a well in the middle. Pour water and oil into the well. Mix together. Add more flour, 1/2 cup at a time until dough is firm. Knead dough until mixture does not stick to hands. Cover tightly and let stand for 1/2 hour in a warm place. On a lightly floured surface, roll out dough to 1/4-inch thickness and cut in 2-inch diameter circles. Add 1 teaspoon filling, fold over 1 half of circle and press the edges together to seal. Bring a large pot of water to a boil, add 1 tablespoon oil, and then add perogies. Stir occasionally so perogies won’t stick to the bottom. When perogies rise to the top, add 1 cup cold water to stop the cooking. Remove the perogies with a slotted spoon. Perogies will cook in 3 to 4 minutes. Serve with either pizza sauce or tofutti sour cream . Guest guest Posted August 7, 2001 Report Share Posted August 7, 2001 I was responding to someone else's email... they made a comment about "there goes tuna from my diet" and I was curious because I had never remembered milk being in Tuna before so I was at a friends house and I looked. I made a simple statement that I didn't see it listed. I didn't post a recipe, I didn't ask people to eat it - I made a comment that casein isn't listed as an ingredient period. I'm not quite sure why that was such a huge issue to anyone, but apparently it was. I apologize that my response offended anyone and it won't happen again, that I can grantee... I'm not vegan - I'm not even vegetarian, it is something I'm interested in because of my love of animals, and my concern for how they are treated. I've been in a transitional phase and trying to learn. I've gotten to where I hardly ever eat meat and due to allergies I've had to cut out dairy and eggs any way. The one thing I've noticed on any vegan group that I've been in is that there is very little in the way of tolerance or understanding for people who are trying to learn. I'm not saying Tammy's email was offensive, because it wasn't, just tired of what I considered to be a non-issue being such an issue. I do appreciate the people who were understanding about this... I will be unsubbing now - I do not have time for this. I have never made sausage rolls. I'm guessing when you say mini rolls, it is something like how you cut cinnamon rolls. Do you lay them flat like a cinnamon roll? Or do I not get the picture at all.
