Guest guest Posted August 22, 2001 Report Share Posted August 22, 2001 On the idea of quick soups, I just did one that certainly counts as quick, although not as fresh and nourishing as it would be completely home-made, still it's a great one to do with toddlers underfoot (mommy can you peel my " agent " pear now!) which I just did. I used a base of Imagine's Potato Leek soup (the one in the aseptic box), added a splash of leftover Imagine creamy mushroom soup from the back of the fridge, and then whatever other leftovers I could find in there. Luckily this week it was schwarma (no idea how to spell that, but it contains eggplant, onions and sauteed gluten in a tasty sauce). I finished it off with frozen organic veggies. So, start to finish less than 10 minutes. It used up the leftovers, and the kids liked eating it. I have to say I don't really like using prepared soups like this too often, but in a short time or low energy situation, they certainly work pretty good, and they can act as a method for getting actual hidden vegetables into my children. Leftover Soup!! i LOVE leftover soup!! it's never the same twice, and the better it is, the less likely you are to be able to duplicate it. :-) My mother was the master of this fine art. i think her all-time record for leftover transformation was three completely different meals ....
