tonight's dinner

tonight's dinner was another " comfort-food " meal, specifically created to

resemble one of my favorite pre-vegan comfort foods, with a little bit o'

childhood nostalgia thrown in. Here's what i did:

 

out of the freezer came a chunk of Gimme Lean sausage-style ~ about 1/6

of the pkg (i cut it into chunks and froze each individually, since i'd

never use the whole pkg up at once).

 

while that was thawing in the sink in a bowl of water, i started making

Scrambled Tofu. Used 1/4 of a tub of firm tofu, well drained and mashed

with a fork. cooked that in a small skillet with a bit (1 tsp?) of olive

oil until it got hot. sprinkled on some onion powder (easier than

messing with chopping an onion, and no little onion pieces to pick out),

about 1/2 Tbsp nutritional yeast and a couple dashes of soy sauce, and

cooked it a bit longer while trying to stir everything together and not

flip it out of the pan.

 

when the that looked " done " , i dumped it into a small glass bowl, and

cooked the Gimme Lean in the same pan in a bit of oil, chopping it up

into little pieces, and cooked it til it started to brown. I set out a

flour tortilla to warm up, and shredded some of my cheddar Vegan Rella

onto it. dumped the tofu back into the skillet, and cooked everything

together for a minute or so. Spooned the tofu-sausage mixture down the

center of the flour tortilla over the cheese, rolled up and voila ~

scrambled " egg " -sausage-cheese burrito, just like i used to make as a

kid. if i'd had the ambition, i'd have made fried potatoes of some sort

to complete the fantasy, i mean meal, but i just didn't have it in me

tonight to tackle two frying pans at once.
