Guest guest Posted August 23, 2001 Report Share Posted August 23, 2001 i had another successful experiment, one with fast-food properties, so i thought i should share: --cook up a big huge pot of pinto beans on a day where you're tied to the house with laundry and stuff. (i'll share my recipe if ya want). when the beans cool down, spoon 1 cup portions into zipper-sandwich bags and freeze flat. (they thaw quicker if they're not a big solid brick, plus they seem to fit better in my teeny freezer) --several months later, rescue the last few bags of pintos from the freezer to make room for something else (like a quart of Soy Delicious Chocolate velvet!!). thaw them out in the fridge overnight (on a plate so they don't leak everywhere). --heat the beans in a pan, mashing them to the desired bean-paste consistancy, and spoon them down the center of thawed-out flour tortillas (with or without cheddar vegan rella shredded on them... i swear this little pkg of vegan rella is gonna last forever!) use 1/3 cup for the large burrito-sized tortillas, and divide 1/3 cup between two small soft-taco sized tortillas. --roll them up however you can manage (i can't do burrito rolls ... they disintergrate on me, so i do more of a jelly-roll style), and wrap individual servings (1 large or 2 small) in plastic wrap. pack them in freezer bags, toss in the freezer and forget they're there for a couple weeks. --rescue a serving of burritos from the freezer by moving them to the fridge to thaw overnight. unwrap them and realize that they won't fit in your microscopic microwave, and your lunch hour doesn't allow time to bake them. Don't panic. grab a frying pan that *will* accomodate the burritos, and heat it up with a touch of oil. fry the burritos over low to medium heat, turning to brown all sides. (i'm sure you could skip the oil if you have a good nonstick skillet and kept the heat low). make sure you don't brown them too fast, or the insides will still be cold. serve with salsa and lettuce and whatever else sounds good. The idea actually came from my mom, who just before she died, told me how good the grilled burritos at Taco Bell looked. she wasn't able to leave the house (much too sick; i'll skip the " watching my mom die of cancer " story), so we tried making them one night. we used pintos, onion, salsa, cheese, the works for filling (this was pre-vegan for me). we baked ours, which only made them hard, not crispy, even though i think we brushed them with oil, or at least spritzed them with cooking spray. and although she could only eat three bites, she proclaimed my pinto bean filling to be very tasty. ~cyd~ ______________ GET INTERNET ACCESS FROM JUNO!
