Guest guest Posted August 23, 2001 Report Share Posted August 23, 2001 This is a very quick pasta dish that you can make with whatever vegetables you have on hand, and it's done in the time it takes to cook the pasta. (In other words, put the pasta water on before you start!) Heat a couple tablespoons of olive oil in a skillet. To this, add garlic (sliced or minced, I use about 4 large cloves) and any vegetables you want. Saute until tender, then toss with pasta. Add salt and freshly ground pepper to taste. I nearly always add sliced onion and crushed red pepper flakes; the rest varies. Last night I used garlic, onions, mushrooms, red & green bell peppers, and broccoli. I also added a little oregano, basil, fresh parsley, and a splash of white wine. Mmmmmm! Other yummy suggestions are roasted peppers, tomatoes, zucchini, yellow squash, etc. Leftover grilled veggies can be used up like this, too. Really, as long as you start with garlic and good olive oil, anything you add to it will be delicious. It's also good with *just* the olive oil and garlic sauce (although I always add crushed red pepper), and served with a green salad. Slice six very thin and lightly brown them in the olive with those red pepper flakes. Crush the other six. When the pasta is done mix it all together, browned and raw garlic. For garlic lovers, certainly, but really delicious. Sarah Oh, another trick...when the pasta is almost done, remove from water and finish cooking in mushroom or veggie stock for added flavor.
