Grilled vegetables are absolutely delicious. Get a grill rack (around $10, wherever grills and accessories are sold), and you will be able to grill *all* your veggies without losing them through the rack.....and you can slice/chop them beforehand. It's a great helper! If you don't have a gas grill, you may want to seriously consider getting one. (I got mine secondhand for $30, so it doesn't have to be expensive.) Grilling caramelizes the sugar in vegetables and just gives them so much wonderful flavor, and as a bonus, you don't have to heat up your kitchen! You can even use it to roast garlic. I use my grill at least twice a week, usually more. Some favorites around here are grilled vegetable fajitas made with onions, peppers, zucchini, and yellow squash; pasta with grilled vegetables (this is made with eggplant, mushrooms, onions, peppers, tomatoes, and garlic, then a bit of fresh basil is added. So good!); and my favorite lunch: whatever vegetables are handy (usually peppers, onions, mushrooms), tossed in a little balsamic vinaigrette and grilled. Then lightly spred two pieces of bread w/pesto, toast the bread, add the veggies, and enjoy! This is truly delicious, even if I make it in the morning to take to work--doesn't get soggy or anything. This is also good with mustard if you don't have pesto. I'm babbling on and on because it's early and I'm not completely awake yet, but the bottom line is, get a grill and a grill rack, use it almost anytime you would roast or saute vegetables, and enjoy the new flavor it brings to your old favorites. (Oh yeah....you can even cook pizza on your grill!) It's a great helper! My grocery store (Kroger) had a grill-wok this summer which I just got. Wok shape, but with a few round holes around the lower sides. If the humidity ever cuts itself down I'lm going to try wok-grilling... Sarah

When you do, let us know if you like it. I've thought about getting one of those so I can stir more vigorously without worrying about my food flying into the fire.
