Lentil loaf

This is from the Veggie Unite! web site.

 

2 C thickly stewed lentils

1/3 C minced onion

2 garlic, minced

1/2 C cilantro, chopped

1/3 C celery leaf, chopped

1 red or green pepper, diced

1 C chopped nuts of your choice

1/4 marinara sauce (I sometimes use salsa instead)

1 C bread crumbs

1 C shredded soy mozzarella

 

Mix all ingredients and places in a meat loaf/bread pan. Bake at 375

for about 45 minutes or until a knife placed in the center comes out clean.

 

Serve with your favorite " gravy, " or more salsa.

 

They freeze well,

Thank you! Do you happen to know what " thickly stewed lentils " means?

Also, there was a recipe on here a while back for squash (butternut, I

think) soup. . .does anyone have that?

Don't use a lot of water when cooking them so they don't turn to liquid

mush. You can also put them in a sieve just to let the liquid drain out

before putting them in with the other ingredients.
