Guest guest Posted August 31, 2001 Report Share Posted August 31, 2001 they say necessity is the mother of invention; that would describe my cooking lately. i'm sick to death of ramen noodles and broth, but still craving tofu and potatoes. my latest creation was thrown together for lunch one day, and worked so well i've had it again. here's what i did: diced two boiled potatoes from the bowl in the fridge, and put it in a microwave-safe bowl. crumbled drained tofu over that. tossed in a bit of soy margarine (2nd time i waited til the end). because our office microwave is *huge*, i put a heaping cup of fresh broccoli florettes in another dish and nuked everything at once for 3-4 minutes. (cold potatoes and tofu might take longer). mixed it all together, and sprinkled it with nutrional yeast for flavor ~ YUM. my microwave at home is microscopic, so i layered the potatoes, tofu then broccoli in my 4-cup Pyrex measure and nuked it that way. quick, filling, tasty, and used things i had in the house, thus buying me another day of not grocery shopping. ~cyd~ ______________ GET INTERNET ACCESS FROM JUNO!
